If you like lemon flavoring in your cheesecake, I recommend adding 1 tablespoon of finely grated lemon zest and replacing half of the vanilla extract with freshly-squeezed lemon juice. Because there are so few ingredients in this gluten free cheesecake recipe, you're bound to notice when something's a little off. For this reason, I highly recommend that you buy the best, freshest ingredients you can, especially when it comes to the cream cheese, eggs, and vanilla extract.


If you don't feel like pulling out the blender or food processor to crush your gluten free graham crackers, reach for a zip-top bag and your rolling pin (or other heavy, blunt object, like a coffee mug or bottle of wine).
